Happy Birthday!

Today is (was?) my Dad's birthday, as well as Bill Mumy's birthday, so I thought I would make cupcakes.

From scratch. And they're vegan.

They're green tea cupcakes!









They were surprisingly easy to make, even the little marzipan flowers weren't that difficult. The hardest part was getting the ingredients. I had to go to an Asian grocery to get matcha green tea powder, which was sort of scary and kind of in not the best neighborhood. But it was an adventure and I think worth it. I haven't tried an actual cupcake yet, but the batter was quite tasty! Best part about vegan cupcakes is that you don't need to worry about salmonella when you're licking the spoon! (Not that any of us did anyway...) I want to make more fancy cupcakes and take pictures of them. I feel like I need a better camera. Or better lighting in my apartment. Or both. Anyway, it's way past my bedtime and as agonizingly true as it is, tomorrow is Friday and not Saturday. Ugh. Later, skaterz. (Happy birthday, Bill! Happy birthday, Dad!)

PS - I totally remember why watching Lost live sucks. I HAVE TO WAIT A WHOLE WEEK BEFORE THE NEXT EPISODE?! GAH! But seriously, this is the first time I've been really upset about the writers strike. HOW CAN YOU ONLY GIVE ME HALF A SEASON OF LOST! I HATE YOU! I NEED ANSWERS!! But, the fact that they're using viral marketing again? WIN! Is it Thursday yet?!!?

The recipe is from Vegan Cupcakes Take Over The World, which I totally recommend for your friend. This was one of the "fancy" recipes, but it was still totally easy and they're delicious!

Cupcakes:
1/2 cup soy yogurt (I used vanilla, couldn't find plain, and a 6 oz pkg will do)
2/3 cup rice milk
1/4 tsp vanilla extract
1/3 cup canola oil
1/2 tsp almond extract
1 1/4 cup all purpose flour
1 tsp baking powder
1/4 tsp baking soda
3-4 tsp Matcha tea powder
1/4 tsp salt
3/4 cup sugar

Whisk yogurt, rice milk, vanilla, oil and almond extract. Sift in flour, baking powder, baking soda, matcha powder, salt and sugar. Bake at 350F for 20 min or until toothpick comes out clean. (For me it was exactly 20 minutes!)

Green Tea Glaze:
2 Tbsp margarine
1 cup confectioners sugar
1/8 - 1/4 tsp matcha tea powder
1 - 2 Tbsp rice milk

Beat the margarine with a fork until fluffy. Add confectioners sugar and matcha tea powder and beat until crumbly. Slowly add the rice milk until glaze is a good consistency. When cupcakes are cool spoon small amount onto the top of each cupcake and spread with the back of a spoon. It's nice to let the green cupcake show around the edge.

Marzipan flowers
1/4 cup marzipan (totally didn't need this much!)
1-2 drops red food coloring

Knead the marzipan and the red food coloring together until the color spreads throughout. Sprinkle confectioners sugar on a surface and press the marzipan flat. (It gets sticky!) I used a fondant flower cutout to make the shapes, but they also said you could use a sharp knife to cut petals and press them together. I used a toothpick to make lines in the petal. They said to use those little silver balls in the middle, but I didn't see any at the store. My advice is to put them on the glaze pretty soon after you put the glaze on because it looks prettier if you don't have to disturb the glaze once it's hardened.

So I tried to remember the glaze from memory today, and apparently I left out a drop of vanilla extract and a 1/4 tsp almond extract. Yeah, I totally didn't put those in and the glaze last night and it came out okay, but yeah.
